Margarita Jello Shots!
For Mary Beth and Toby's wedding, I created four Margarita Jello Shots.

Just in case you give a rat's rectum, here are the recipes and my comments about each:

REGULAR MARGARITA
JELLO SHOTS

This is based loosely on the recipe for the "perfect margarita", served by Jimmy Buffet's Margaritaville bars.

1/4 cup Rose's Lime Juice
1/2 cup lime juice
1 1/2 cups water
2 packages lime Jello
2 envelopes Knox gelatin
3/4 cup Cuervo 1800 tequila
Any tequila will do, but the nasty flavor of cheap tequila usually comes through. Use the good stuff if you can. I don't care much for any of Cuervo's tequilas, but I wasn't going to use my Herradura on jello shots, so the 1800 worked out fine.
1/4 cup triple sec

Put the tequila and triple sec in the freezer, so they are well chilled when you add them. Boil the lime juices and water. Mix the Knox with the Jello, and then slowly stir into the boiling juices. Allow to cool to room temperature. Add the tequila and triple sec. Chill for at least 3 hours.

This can be served with margarita salt for dipping, for those who like salt with their margaritas.

I think the flavor and consistency of these Jello shots were exactly what I was looking for.

MANGO MARGARITA
JELLO SHOTS

1/2 cup water
2 mangoes, pureed (approx. 1 1/2 cups)
1/4 cup lime juice
1/4 cup sugar
2 envelopes Knox gelatin
2 packages lime Jello
3/4 cup Cuervo 1800 tequila
1/4 cup triple sec

Put the tequila and triple sec in the freezer, so they are well chilled when you add them. Boil the mango puree, and water. Mix the Knox with the sugar, and then slowly stir into the boiling juices. Allow to cool to room temperature. Add the tequila and triple sec. Chill for at least 3 hours.
This was an interesting experiment, based on a mango margarita recipe I found online. The lime here overpowered the flavor of the mango, so these ended up being fruity tasting but you'd never have guessed that there was any mango in them. Plus, the artificial color of the Jello made these green. Next time, I'd try these with less lime, and strictly with unflavored Knox rather than Lime flavored Jello.

CANTALOUPE MARGARITA
JELLO SHOTS

1/2 cantaloupe, pureed (approx. 2 cups)
3 tablespoons lime juice
1/2 cup sugar
3 envelopes Knox gelatin
3/4 cup Cuervo 1800 tequila
1/4 cup triple sec

Put the tequila and triple sec in the freezer, so they are well chilled when you add them. Boil the juices. Mix the Knox with the sugar, and then slowly stir into the boiling juices. Allow to cool to room temperature. Add the tequila and triple sec. Chill for at least 3 hours.

Another fruity tasting jello shot, with a hint of cantaloupe. But since cantaloupe is such a subtle flavor and the lime and tequila are both strong flavors, this was not quite what I was looking for. Plus, the color wasn't terribly appealing. I probably won't make these again.

STRAWBERRY MARGARITA
JELLO SHOTS

1 1/2 pints fresh strawberries, pureed
approx. 1/2 cup water
3 tablespoons lime juice
4 envelopes Knox gelatin
generous 3/4 cup Cuervo 1800 tequila
1/2 cup triple sec

Put the tequila and triple sec in the freezer, so they are well chilled when you add them. Puree the heck out of the strawberries, so even the seeds get pureed as best you can. Add enough water to the berries to make a total of 2 1/4 cups liquid. Boil the lime juice, strawberries and water. Mix the Knox with the sugar, and then slowly stir into the boiling juices. Allow to cool to room temperature. Add the tequila and triple sec. Chill for at least 3 hours.

These were the strongest shots of the night, but they also were my favorites. Next time, I'd add a little red food coloring, because the pasty pink these turned out to be wasn't terribly appetizing. Or I might use one package of strawberry Jello in place of one envelope of Knox and 1/4 cup of sugar. I'd also probably add one more envelope of Knox, to give these a little more solid consistency.

NOTE: For Darryl Strawberry jello shots, substitute an 8-ball of cocaine for the tequila.
